Individual hand washing encourages the growth of a red bacterial rind which ripens and flavours the cheese - ranging from a `little on the nose' to outrageously piquant in taste and aroma.

A speciality washed rind cheese developed at Milawa Cheese Company. A small round cheese with a soft, smooth texture and a more subtle taste than Milawas Gold. Everyone's favourite, it's a great intoduction to the washed rind style.

A firm textured cheese, mild when young it matures to a nutty flavour. It has long lasting qualities. A style inspired by the French tradition of cheesemaking rather than the firmer, hard goat cheeses of Italy and Greece.
