There are cheddars. And then there are bold, bitey, crumbly aged cheddars who kick down the door and say ‘go on then, eat me!’ Ours is one of those. Our founder David Brown has always loved aged cheddars and had to have one in our lineup, so we named this one after him. David personally selects the wheels that will bear his name then takes them to our maturing room where they’re aged to perfection. This cheddar is a versatile essential. Serve with apple and pear wedges or a sweet paste. Melt a slice on top of a patty on the grill for the best burger ever. Or simply pair with a glass of dry red like Tempranillo or Pinot Noir.
