Baked Brie Cob Loaf

What’s better than sharing a cob loaf with your mates in the spring sunshine? Take your cob loaf to the next level with this delicious recipe using our Milawa Brie.

INGREDIENTS

1 long, sliced baguette

2 tsp garlic-infused extra-virgin olive oil

250g wheel of Milawa Brie (or Milawa Camembert, if preferred)

4 sprigs thyme, plus extra to sprinkle

1 garlic clove, finely sliced

Honey and sliced figs, to serve

METHOD

  1. Preheat oven to moderate, 180°. Grease a round ovenproof dish. 
  2. Toss sliced baguette in the garlic-infused extra-virgin olive oil and season. Arrange ⅓ sliced baguette in base of pan. 
  3. Make 8 slits in top of wheel brie and insert four sprigs of thyme and the finely sliced garlic. Place on top of bread. Arrange remaining baguette slices around outside of brief. Bake 10-15 mins until brie is soft and bread is crunchy.
  4. Serve drizzled with honey, sprinkle with thyme leaves and accompanied with sliced figs.
