Our white mould maiden is clean, mild and buttery. Firm when young (aren’t we all?) so if that’s how you like your Brie, unwrap her then. If you prefer a stronger flavour, let her mature and she'll soften as she ripens from the outside rind into the centre, unleashing a rich milkiness and luscious texture. She’s ripe and ready for your cheeseboard, and a perfect match for a biscuity bubbly sparkling white. At her full maturity, her white mould can develop a darker, spotty rind and a slight ammonia aroma, giving her great depth of flavour, she can be a bit bitey, but you’ll still love her.
