Cooper is a little bit special. He was first created as a special release to celebrate the birth of the third generation of the Brown cheese family - Ceridwen’s son Cooper. Inspired by his mother’s love of ashed goat’s cheese and his father’s fondness for a harder cow’s cheese Cooper is the best of both. He’s similar in style to Morbier: semi-hard with a creamy texture, fresh acidic tones and a smooth caramel aftertaste. What makes him extra special though is the ash trickled through the curds in the centre of the cheese resulting in a marbled effect. The ash comes from grapevines planted by Cooper’s grandparents - our founders David and Anne - when they bought the home of Milawa cheese. Cooper is a great table cheese but also melts and cooks well.
