Our Aged Milawa Blue originates from our soft and creamy Milawa Blue but is given more time to mature and gain a little more oomph! Hand-selected batches of Milawa Blue are aged for up to six months to create slightly sweeter, stronger flavours and a dark-coloured interior. Her delicate blue veins come from Penicillium Roqueforti mould spores which are added at the milk stage. But the mould only develops once we’ve pierced her with stainless steel needles to allow oxygen in. You know what they say: no pain no vein. Aged Milawa Blue pairs beautifully with dessert wines or sweet, fruity reds.
