Milawa White shouldn’t exist. She was supposed to be a blue cheese but she didn’t develop veins OH NO. Cheesemakers are curious creatures though, so we tasted her and OH YES! She was so creamy, so sweet, so unexpectedly delicious that we decided to make her on purpose. Typically aged for six months, she’s sweeter than our blue and almost spreadable at room temperature. When heated she unleashes denser, more savoury flavours and absolutely shines in a cheese toastie or as a melted cheese sauce. Cheddar lovers are big fans. Pair with champagne, whites or dry/light reds.
